The only thing that comes to mind is Minecraft but what I'm asking for is games where you don't know what are going to find, games where you tame the wilds or meet the natives.

I can imagine an Arma mod might be up to it, but essentially I want to explore with a friend(s).

Any suggestions?

Hunted: The Demon's Forge, I think, would be a good Co-op game. Don't know about the adventuring part, but I think it'll do

Co-op, yes. Rest of the OP's requirements? Not so much.

I remember that Fable III had both co-op and adventuring. Too bad it's just mediocre.

/sigh

Borderlands?
Civ IV?

(Dead Island maybe, not played it)

Terraria might be closer to the mark than Minecraft, but it's probably still not quite what you want.

I am always looking for good coop aswell. Sacred 2 has very great coop and is a very decent game to boot. We spent 30 hours in there until those pesky exams...
And there is a lot of exploration.

I've been playing Dead Island with a friend and it's actually the closest I can think of to a Bethesda-style, open-world exploration game with coop. It's got a lot of faults as a game and its world isn't that much up to par with Elder Scrolls/Fallout of course, but it makes up for it by being coop-able.

Other than that, there's the oldies like System Shock 2, I suppose.

To an extent what you want is maybe best found in an MMO of some form?
Sure, you need to wilfully ignore wikis and the like, but that isn't too hard to do.

I certainly know I spent a lot of time exploring and cooping in Neocron.

System Shock 2, I suppose. It has a co-op mod, now? I thought it's just singleplayer

There was a patch that added a (slightly buggy) co-op mode.

SpellForce 2 might meet your criteria. Do get some choice how you want to progress.
