I've always had a problem with knocking people unconscious in games. It's always handled the same way as killing someone--the person never wakes up. You can't knock someone unconscious in real life...

Hah, that describes my first playthrough. I'm using a dex build now, and I focus on strafing and dodging rather than parrying, which I still haven't gotten good at.
Oh come on, the archers are pretty unfair. You can't really fight them on that narrow ledge, because either their arrows or their shield bash will knock you off. I resorted to luring one of them out...
The only unfair portions of the game: Capra Demon and Anor Londo archers. I've only beaten the Bed of Chaos once, though, she might be worse the second time around.
Go with a dexterity weapon, they are more fun. The Crimson set is a nice light armor set.

He's the hardest boss that I felt was "fair." I had to resort to tanking him with Havel's armor and my upgraded Great Club.
You think they were easy, wait until Pinwheel. I'm kinda pissed I didn't try the Catacombs earlier in the game to get the rite of kindling, you really just need a divine weapon.
