It's something like:
Chipotles (canned with sauce is fine) (2-3)
Garlic cloves to taste (6)
1/3 cup olive oil
1 egg yolk
Sea salt
Black pepper
Lime juice to taste (~2 tsb)
Cook olive oil and garlic for about 10 minutes over low-med heat, or until the garlic is soft and lightly browned. Remove garlic and let oil cool a bit.
Put the garlic, egg yolk, chipotle, salt and pepper in a food processor and blend. Slowly add the leftover oil to the mix as it's running (make sure it's cooled down). Once it's emulsified and the oil is incorporated, heave it into a bowl and season to taste.
Sure thing! It's a fairly common recipe, so whatever you find online will likely be similar. You don't need chipotles or lime either, but that's what I use for my all-round aioli. The food processor will make your life easier in with a ton of things; you could use a mortar & pestle in theory, I think, but you're opening a new dimension of foodery with a processor.
