The Endless Ocean games from the Wii. A bloody diving game and it's not on the PC? Plus, if it was on the PC it wouldn't be so damned hard to find a copy of the second one and I could enjoy better resolutions and my arm wouldn't go to sleep holding up the controller.
I've also been wanting to give Fragile Dreams a try so a PC version would make me happy.
Mercenaries. I would port it myself if I could get permission and the source code and build assets. RIP Pandemic.
I truly can't think of any. Most of the Gamecube's first-party titles are absolute classics and have aged extremely well, but we'll never see a Nintendo game on PC.
Besides the obvious ones like Ico and SotC I can't think of any particularly memorable PS2 games. I mostly played JRPGs at the time and I just don't ever see myself going back to them.
Megaman X8 maybe? Did that get a PC release?
+1 for Mercenaries. I've been playing that shit for so long I've pretty much ignored everything else on that console. Sad that I don't have a PS2 now and the game's all scratched up. Bloody awesome game, that was.

ICO and SotC are masterpieces, and any platform would benefit by having those two games in it's library. Same goes for MGS3: Snake Eater.
Some other great titles: Metroid Prime, Ninja Gaiden Black, The Warriors, TLoZ: Wind Waker, Okami, Eternal Darkness, etc.

A couple of current gen titles spring to mind.
Battlefield Bad Company. Single player wise, I still think this was a much better game than the second one, and even BF3 quite honestly, and yet no PC release. It managed to capture some of the Battlefield experience in a single player setting. Big open maps with a feeling of freedom even if sometimes you really only had one way to go. Lots of weapons and vehicles to utilise and lots of buildings to destroy. I thought the SP campaign in the second one was very run of the mill and quite stymied by comparison. Utterly linear, no vehicles, no freedom, no where near as much destruction, just another military FPS. I was not impressed, it was a step backwards. The BF3 campaign was similarly dissapointing.
Red Dead Redemption. Excellent western game in the GTA mould. One of my favourite game "endings" ever, really superb. Why no PC release? I don't think there's ever been an explanation for it has there? GTA4 was ported, LA Noire was ported, why not Red Dead?
Hmm, MGS3 is one, Wipeout another (I'm really itching to build a proper Wipeout cockpit but it seems financially irresponsible to spend all that money just to play one game)... I suppose GT3 and/or 4 but as GT5 is the same but shinier I would've said that if this had been a more open topic.
I'm struggling to think of many more, I really am. Tekken 3 (mainly because I don't want to buy the Tekken film just to get an HD remake of it), Hitman already exists on PC... OH! Contracts doesn't, Hitman Contracts. And... Hmm. Ace Combat 3 was pretty good, and I can't remember if Vigilante 8 was PS or PS2, but that was quite fun as well. Fuel was as close as we got to Smuggler's Run and was frankly not very good (neither was Smuggler's Run, mind), and oh! Yes! The Getaway and The Getaway: Black Monday. They were awesome games and I shed a rapid succession of single tears when I heard they'd cancelled the PS3 sequel.
