Totally depends on the game.
I've found that usually if I can play a game in windowed mode (full) then it doesn't mind when I alt-tab. Otherwise it'll pause. That's just my experience though. Alt tabbing is so 90's , i dont play anything these days unless it runs in windowed mode and lets me look at the bbc website while playing it to sate my attention deficit disorder.

As Finicky suggested, try finding a fullscreen windowed or borderless windowed mode in the graphics settings. Simple Borderless Window for Skyrim has made my life so much easier.

Some games still pause if they lose focus in windowed mode, though.Stealth Mode!

Oh, you need performance to play these crappy console ports? Are you running Windows 3.1 lol? Any decent computer can run everything on max settings borderless windowed with no problems!
I never noticed much of a performance hit on borderless windows and some games even perform better for some reason.

Most games perform slightly less well. If you aren't pushing your computer to the edge of good performance without window mode, you'll probably only see a tiny bit more stuttering in window mode. If you're already at the edge, you might have trouble with window mode. There are certain games that, with certain graphics settings, run better in window mode.
It's a all over the place. Utterly random. Check out tweak-guides and forums for the specific game. If you have serious performance issues playing a game in windowed mode, make sure part of the game window isn't on a second screen. If its trying to render on 2 screens you'll get a big performance hit.
