Assassin's Creed Odyssey Demosthenes: how to complete the side quests
Just off the side of the Statue of Athena in Athens is Demosthenes. He'll begin pacing and muttering to himself as to how to further the Athenian effort. Noticing your talents as a mercenary, he'll ask you to go kill a bunch of high-ranking Spartans. This guide will go over the main side quests that Demothenes wants you to do for him and how to complete them.

Creating Opportunity
Demosthenes, an Athenian general near the Statue of Athena in Athens, wants you to cripple the Spartans. You’ll need to kill polemarchs to do so. Returning with the seals will make him ask for more commanders killed. He'll also give you the Demosthenes's Belt and a bit of drachmae.
The Wise General
Kill three more Spartan Polemarchs and return with their seals. This will basically be the exact same task as the previous quest, which can be the same Polemarchs that you killed in the previous task. Upon returning the seals to him, he'll divulge more information about his status as a general in the Athenian army, as well as his greaves.
In the Midst of Chaos
More Spartan Polemarchs need to die and more seals need to go to Demosthenes. As is with the previous quests, you can farm the same Polemarchs should you so wish. You'll get his hood for your trouble.
Swift as Wind
You know the drill now, kill three more Polemarchs and you'll get a bit more of Demosthenes's story, as well as his Battleplate and some drachmae for your hard work doing the same repetitive thing again and again.
Last Request
It actually is his last request, and you're never going to believe what his last request is. Yes, you probably got it in one. Kill three more Spartan Polemarchs to get his gauntlets, completing the Demosthenes armour set. You'll also get some drachmae.
